Gluten Free Doesn’t Mean Life is Over

Over the past year, I’ve dealt with gluten sensitivities that have caused migraines, stomach pains, and just plain no fun. And I am the girl who loves food. And I mean loves food. I could live off of sweets such as pancakes, french toast, and brownies. Ok, maybe not live off of it, but passing on it was definitely not easy.

So when the migraines began, part of me cried a little inside. It was difficult to cut out some of my favorite items, but it was for the best, to say the least. This is not to say I don’t have cravings and cheat meals once in a while – but they must be infrequent. There are times when I am stuck with no choices but to eat a “gluten full” meal or snack and I worry that I will pay for it later. If my day was “gluten full”, I typically do pay for it.
Soooo, what’s the alternative? Being kinder to myself and in the end happier overall. I try to be paleo, but I love cheese too much to be 100% paleo. I mean, it’s cheese afterall. Luckily, there are quite a few gluten free options – even when it comes to bread (Thank goodness!)
My go-to’s as of late have been:
  • On the go: KIND gluten free bars, Larabars (paleo)
  • Breakfast: smoothie with almond or coconut milk; one of the bars mentioned above, fruit or eggs
  • Lunch: Sandwich with gluten free bread; salad (nicoise is one of my faves lately); stir fry bowl; soup
  • Dinner: Fish/Chicken and vegetable; Burger (without bread); Salad; Breakfast for dinner (usually an omelet full of veggies and ham)
  • Snacks: On the go options from above; vegetables and guac; smartfood popcorn; pistachios, fruit
  • Dessert: coconut ice cream, fruit, gluten free cookies
  • Cheat Meals: Cheese!; Sushi; Burger with bread; French fries
No, I’m not perfect everyday, but the more often I am, the happier my body is. And when my body is happy, the more energy I have to workout, be productive at work, and hang out with friends. Oh and I sleep better too!
